Jambalaya in a Hurry March 7, 2011

Fat Tuesday is tomorrow already – the day before Ash Wednesday, and a day for great cajun cookin’, New O’Leans style.

I am going to make this for dinner:

Jiffy Jambalaya
from Taste of Home / Cooking for 2 Magazine

Your family will love this hearty and smoky dish that comes together in a snap. A basic red beans and rice mix gets a quick makeover for a deliciously filling meal.
4 Servings Prep/Total Time: 30 min.
1 package (8 ounces) red beans and rice mix
1/2 pound smoked sausage, sliced
1/2 cup chopped onion
1 tablespoon olive oil
1/2 pound cooked medium shrimp, peeled and deveined
1 can (14-1/2 ounces) Hunt’s® Original Diced Tomatoes, drained
1 teaspoon brown sugar
1/4 teaspoon Louisiana-style hot sauce, optional

Cook red beans and rice mix according to package directions.

Meanwhile, in a large skillet, saute sausage and onion in oil until onion is tender. Add the shrimp, tomatoes, brown sugar and hot sauce if desired. Cook for 3-4 minutes or until heated through. Stir in rice mixture. Yield: 4 servings.

Nutrition Facts: 1-1/2 cups (calculated without hot sauce) equals 544 calories, 28 g fat (8 g saturated fat), 125 mg cholesterol, 1,754 mg sodium, 49 g carbohydrate, 6 g fiber, 27 g protein.

I made it, and I really enjoyed it. Next time, I’ll remove the shrimp tails before I cook them. Oh, and add some more pork sausage for Lacy the dog. She isn’t big on shrimp, but she stood by the table until the pork was gone!
